Discover the Amazing Taste of Tagine with Chicken


Tagine with Chicken, also known as "Djej Mqualli," originated in the kitchens of ancient Morocco, where it was created to honor the country's rich culinary tradition.

This recipe, inspired by Arab, Berber, and Andalusian traditions, mixes delicate chicken, aromatic spices, and a medley of vegetables cooked to perfection in a classic clay tagine.

Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1 lemon, sliced
  • 1/2 cup green olives, pitted
  • Fresh cilantro or parsley, chopped (for garnish)
Now, let's move on to the cooking steps:
  1. In a large, deep pan or Tajine pot, heat the olive oil over medium heat. 
  2. Add the chicken thighs, skin side down, and sear them until golden brown. 
  3. Flip the chicken and sear the other side as well. 
  4. Remove the chicken from the pan and set it aside.
  5. In the same pan, add the chopped onion and minced garlic. 
  6. Sauté them until they turn translucent and fragrant.
  7. Next, add the cumin, coriander, paprika, turmeric, ginger, cinnamon, salt, and pepper to the pan.
  8. Stir well to combine the spices with the onion and garlic mixture. 
  9. Pour in the chicken broth and give it a good stir. 
  10. Add the sliced lemon and green olives to the pan. 
  11. Bring the mixture to a simmer.
  12. Carefully place the seared chicken thighs back into the pan, nestling them into the broth mixture. Make sure they are partially submerged in the liquid.
  13. Cover the pan with a lid and let the Tajine simmer over low heat for about 45 minutes to 1 hour, or until the chicken is cooked through and tender.
Once the chicken is fully cooked, remove the lid and let the sauce thicken slightly for a few minutes.
Before serving, garnish the Tajine with freshly chopped cilantro or parsley for a burst of freshness.
