Mkhanfar, Berber panacake super easy to make
Mkhanfar, also known as (Moroccan pancakes). 
Mkhanfar is a thick, spongy pancake that is halfway between the baghrir we all know, and the pancake 🥞 fried on both sides.
A kind of hybrid pancake that combines the 2 textures.... The result is a delicious mouthful of airy pancakes!
These Moroccan pancakes are delicious for breakfast, brunch or as a sweet treat in between.

Ingredients:

- 250 ml water
 - 250 ml milk
 - 200 g fine semolina
 - 100 g whole wheat flour
 - 16 g baking powder
 - 7 g instant yeast
 - 3 g salt
 - 1 egg

- Butter
 
Preparation:
- Pour the lukewarm water and milk into a mixer.
 - Add the fine semolina, whole wheat flour, baking powder, yeast, salt and egg. Mix until a smooth batter forms.
 - Place batter in a deep bowl and cover tightly. Let the batter rise 20-30 in a warm place.
 - Melt the butter in a saucepan over medium-high heat, or slightly lower, but not higher. Add the batter (80 grams per pancake).
 - Fry the whole wheat mkhanfer. When air bubbles appear, flip the pancake.
 - Bake the whole wheat mkhanfer nice and golden brown.
