Moroccan Coconut Cake

Who doesn't know the famous Moroccan coconut cookies? 

This cake is perfect for special occasions or just as a treat to enjoy for coconut lovers, and a must-try for anyone who wants to explore Moroccan cuisine. Let's discover how to make it at home.

Ingredients:

Servings -24+

  • 3 eggs
  •  180 g sugar
  •  16 g vanilla sugar
  •  1 g salt
  •  200 ml sunflower oil
  •  20 ml orange blossom water
  •  220 g flour
  •  15 g baking powder
 TOPPING

  • 50 ml Greek yogurt
  •  200 g apricot jam
  •  20 ml orange blossom water
  •  grated coconut

Instructions:

  1. On high speed, beat eggs together with sugar, salt and vanilla sugar for 5 to 8 minutes. It should get a frothy effect.
  2. Add the sunflower oil and orange blossom water and mix together until combined.
  3. Add the flour, baking powder and yogurt and mix for a minute.
  4. Place in a preheated oven at 170 °C for about 15 to 25 minutes.
  5. The cake is ready when you prick it with a skewer, and it comes out clean.
  6. Mix the apricot jam together with the orange blossom water, spread it evenly on the just-out-of-the-oven cake. This way the jam soaks in well. 
  7. Sprinkle grated coconut on top.
Tips
- Replace vanilla sugar with vanilla extract.
- Replace yogurt with milk or buttermilk.
- Keep an eye on the cake because every oven works differently.
- You can also do it in a different baking pan. 
Are you using a smaller baking pan? If so, keep in mind that it needs longer in the oven.
