Moroccan Mrouzia Lamb Tagine with Raisins
Mrouzia. This delicious lamb tagine, with caramelized onions and juicy raisins, is not just another dish - it is an experience. Mrouzia is considered a typical Moroccan dish and is a recipe you absolutely must try. Find out why it holds a special place on every cooking enthusiast's to-do list.
Ingredients:
- 400g of lamb
- 3 onions
- 1 clove garlic
- a few pistils of saffron
- 1/2 teaspoon salt
- 2 teaspoons ras el hanout
- 2 teaspoons ginger
- 1 drizzle olive oil
- 10cl glass of water
- 2 tbsp honey
- 2 tsp ground cinnamon
- 100g raisins
- 50g almonds, blanched and fried
Instructions:
First marinate the lamb.
- To do this, put the spices for the marinade in a pan: salt, ginger, ras el hanout and saffron spices.
- Add a drizzle of olive oil, a little water and stir.
- Place the meat in the pan, brush all sides with the marinade, and set aside.
- Peel and finely chop the onions.
- Add them to the casserole with the meat.
- Add a grated clove of garlic and stir.
- Cover with water and cook over low heat for 1 hour.
- You can also cook it in a pressure cooker, in which case 40 minutes is enough.
To serve
If the mrouzia was prepared in a tagine, serve the meat directly from the pan. Otherwise, arrange the meat in the center of a serving dish and distribute the raisins, almonds and sauce over the meat. (If the fried almonds were prepared ahead of time, sprinkle them over the mrouzia as a garnish.) Serve hot.
