Ingredients:

  • 400g of lamb
  • 3 onions
  • 1 clove garlic
  • a few pistils of saffron
  • 1/2 teaspoon salt
  • 2 teaspoons ras el hanout
  • 2 teaspoons ginger
  • 1 drizzle olive oil
  • 10cl glass of water
  • 2 tbsp honey
  • 2 tsp ground cinnamon
  • 100g raisins
  • 50g almonds, blanched and fried

Instructions:

First marinate the lamb.
  1. To do this, put the spices for the marinade in a pan: salt, ginger, ras el hanout and saffron spices.
  2. Add a drizzle of olive oil, a little water and stir.
  3. Place the meat in the pan, brush all sides with the marinade, and set aside.
  4. Peel and finely chop the onions.
  5. Add them to the casserole with the meat.
  6. Add a grated clove of garlic and stir.
  7. Cover with water and cook over low heat for 1 hour.
  8. You can also cook it in a pressure cooker, in which case 40 minutes is enough.
To serve
If the mrouzia was prepared in a tagine, serve the meat directly from the pan. Otherwise, arrange the meat in the center of a serving dish and distribute the raisins, almonds and sauce over the meat. (If the fried almonds were prepared ahead of time, sprinkle them over the mrouzia as a garnish.) Serve hot.
