Moroccan white beans recipe (Loubia)
Beans in Morocco is a popular dish for dinner or lunch. You can usually find it in small restaurants and it is very cheap. It is truly one of the favorite dishes in Morocco!
This is a vegetarian recipe, but sometimes it is prepared with some meat. The most typical way you find in Morocco is with pieces of mutton stomach. Of course, you can also just take a piece of chicken, beef or lamb.
The ingredients for this recipe are very simple.
Use an Instant Pot.
Cook time: 40 MINUTES
Ingredients:
- 1 cup dried white beans.
- 5 garlic cloves, or more!
- 1 tablespoon cumin.
- ½ teaspoon salt, ¼ cup olive oil.
- 1 tablespoon paprika.
- Optional: 1 spicy pepper, such as jalapeño or serrano.
- 2 cups water or broth (any kind of broth).
Instructions:
- Soak the beans overnight in enough water to thoroughly cover them, plus an inch or two more as the liquid absorbs.
- When ready to cook, combine all ingredients in the instant pot.
- Close the top and valve.
- Pressure-cook for 40 minutes. Because of the consistency of the beans, a longer cooking time is recommended.
- The beans should be extremely soft, with a thick liquid remaining. If it's still too watery, switch on the sauté option to reduce the liquid. You may also wish to use a fork to mash some of the beans to make the sauce richer.
- Serve as a main course with bread to shovel up or as a side dish.
Notes:
If you don't have time to soak the beans overnight, soak for at least a few hours. You'll also need to add some more cooking time.
This recipe can also be prepared in a standard pressure cooker on the stove top. I would add an extra cup of liquid because it appears to evaporate quickly.
