Sellou, a Moroccan recipe made from toasted flour.

Traditionally, Sellou recipe was made by manually pounding roasted almonds, sesame seeds, and aromatic spices with a mortar and pestle. This painstaking process not only infused the ingredients with rich flavors, but it also fostered a sense of togetherness and communal spirit among families who met to prepare the dessert.

It permits you to keep up the fast. Indeed, it is one of the delights we enjoy during Ramadan. Not only that, but it is also suitable for celebrations or births. 

It is claimed to have been popular with pilgrims journeying in caravans to Mecca many years ago.
This is not a modern dish; it was popular during the Almoravid era (11th/12th century).

Modern methods have simplified the preparation process, yet the essence of Sellou remains unchanged.

Ingredients for Sellou (serves 2):

  • 1 cup of blanched almonds with peel removed.
  • 1/2 cup sesame seeds.
  • 1/4 cup honey (adjust for desired sweetness).
  • 1/2 teaspoon of ground cinnamon.
  • A pinch of ground anise seed (optional)
  • A pinch of salt.

Instructions:

  1. Start by toasting the almonds and sesame seeds. In a dry skillet over medium heat, combine the almonds and sesame seeds. Stir them frequently until they turn golden brown and emit a delicious perfume. Be careful not to burn them. Once toasted, remove from the heat and allow cooling.
  2. Once the almonds and sesame seeds have cooled, place them in a food processor or blender. Pulse them till finely powdered, but don't overprocess; you want some texture.
  3. In a mixing bowl, combine the ground almonds, sesame seeds, ground cinnamon, ground anise seeds (if using), and a pinch of salt. Mix thoroughly to ensure the spices are properly distributed.
  4. Drizzle the honey into the mixture gradually, stirring constantly. Add enough honey to create a cohesive texture that will stick together when squeezed.
  5. Once the ingredients have been thoroughly blended, transfer the Selou to an airtight container and let aside for at least a few hours or overnight. This resting period allows the tastes to blend together, which improves the overall taste.
  6. Sellou can be served in tiny doses on its own or as a topping for bread, pancakes, or pastries. It mixes perfectly with a cup of Moroccan mint tea, improving the overall experience.
