  • 500 g Mosaic chickpeas
  • 2 onions
  • 4 garlic cloves
  • 1 bunch parsley
  • 2 tbsp paprika
  • 1 tbsp cumin
  • 4 tablespoons chili paste
  • Oil
  • Salt
  • Pepper

INSTRUCTIONS:

  1. Soak the chickpeas the day before in a dish of cold water.
  2. On the day, preserve the soaking water and rinse the chickpeas. 
  3. Squeeze them softly between your thumb and forefinger to remove the skin.
  4. Peel and cut the onion and garlic.
  5. In a pan over low heat, heat 2 tablespoons of oil and add the chopped onion and garlic. Once transparent, mix in the spices and chili paste. Fry for five minutes.
  6. Combine the chickpeas with the cooking water. Cook for an hour.
  7. Rinse, drain, and finely slice the parsley.
  8. Place the chickpeas on a serving plate and sprinkle with parsley.
