- 500 g Mosaic chickpeas
- 2 onions
- 4 garlic cloves
- 1 bunch parsley
- 2 tbsp paprika
- 1 tbsp cumin
- 4 tablespoons chili paste
- Oil
- Salt
- Pepper
INSTRUCTIONS:
- Soak the chickpeas the day before in a dish of cold water.
- On the day, preserve the soaking water and rinse the chickpeas.
- Squeeze them softly between your thumb and forefinger to remove the skin.
- Peel and cut the onion and garlic.
- In a pan over low heat, heat 2 tablespoons of oil and add the chopped onion and garlic. Once transparent, mix in the spices and chili paste. Fry for five minutes.
- Combine the chickpeas with the cooking water. Cook for an hour.
- Rinse, drain, and finely slice the parsley.
- Place the chickpeas on a serving plate and sprinkle with parsley.
