Moroccan mechouia salad

Mechouia Salad (Felfla Mechouia)

This delicious meal captures the essence of Moroccan cuisine, with its harmonic blend of roasted peppers and tomatoes. The Mechouia Salad, made with only two ingredients, brings back the atmosphere of the Mediterranean.

Ingredients

  • 4 tomatoes
  • 4 peppers
  • 5 garlic cloves
  • olive oil
  • 2 tablespoons lemon juice
  • salt and pepper

Instructions:

  1. Grill the peppers for about 10 minutes on all sides, until browned. 
  2. Wrap with plastic wrap for easy cleanup. 
  3. Peel the tomatoes, remove the seeds, and chop them into little pieces. 
  4. Once the peppers have cooled, peel them and remove the stems and seeds. 
  5. Cut into smaller pieces. Place the tomatoes and peppers in a sauté pan, then add the spices, olive oil, and minced garlic. 
  6. Cook for 15 minutes over medium heat, stirring regularly, until the sauce has evaporated. 
  7. Add the lemon juice.
