Spinach and Potato Tortilla Recipe

Ingredients:

4 Servings

POTATO MIXTURE.

  • 45 mL olive oil
  • 130g yellow onion
  • 850g potatoes.
  • 5g salt 
  • 2g black pepper
  • 3 g cumin.
  • 4 grams garlic powder
  • 4 g onion powder
  • 50 mL water
  • 150g fresh spinach 

Egg MIXTURE

  • 5 eggs
  • 1 g salt.
  • 15 mL olive oil

Instructions:

  1. Peel the potato and cut it into little pieces. 
  2. Peel and slice a yellow onion.
  3. Heat the olive oil in a pan over medium-high heat. Sauté the yellow onion for three minutes. Combine the potatoes, salt, black pepper, cumin, garlic powder, and onion powder. 
  4. Fry for 1 minute. Add water. Cook for 10 minutes, covered, over moderate heat.
  5. Add the spinach. Cook for 10 minutes, covered, or until the potatoes are tender. Stir in between.
  6. Put the eggs and salt in a large bowl. Add the potato mixture. Mix well. 
  7. Heat the olive oil in a pan over medium-high heat.
  8.  Spread the potato mixture evenly, pressing down slightly to flatten. 
  9. Cook the potato tortilla until the bottom is golden brown (check with a spatula). Place a large plate/sheet/lid on top. 
  10. Quickly turn the skillet over. Slide the potato tortilla back into the skillet. Continue to bake for a few minutes. Serve, and enjoy!
