Spinach and Potato Tortilla Recipe

Ingredients:

POTATO MIXTURE.
- 45 mL olive oil
- 130g yellow onion
- 850g potatoes.
- 5g salt
- 2g black pepper
- 3 g cumin.
- 4 grams garlic powder
- 4 g onion powder
- 50 mL water
- 150g fresh spinach
Egg MIXTURE
- 5 eggs
- 1 g salt.
- 15 mL olive oil
Instructions:
- Peel the potato and cut it into little pieces.
- Peel and slice a yellow onion.
- Heat the olive oil in a pan over medium-high heat. Sauté the yellow onion for three minutes. Combine the potatoes, salt, black pepper, cumin, garlic powder, and onion powder.
- Fry for 1 minute. Add water. Cook for 10 minutes, covered, over moderate heat.
- Add the spinach. Cook for 10 minutes, covered, or until the potatoes are tender. Stir in between.
- Put the eggs and salt in a large bowl. Add the potato mixture. Mix well.
- Heat the olive oil in a pan over medium-high heat.
- Spread the potato mixture evenly, pressing down slightly to flatten.
- Cook the potato tortilla until the bottom is golden brown (check with a spatula). Place a large plate/sheet/lid on top.
- Quickly turn the skillet over. Slide the potato tortilla back into the skillet. Continue to bake for a few minutes. Serve, and enjoy!
