Baked eggs with spinach, tomatoes, ricotta & basil

BM, also known as Bid & Maticha (meaning Egg with Tomato).
It is an essential Moroccan recipe.
Try it, it's simple!

Honestly, I cook this for a nice meal with a big green salad or on any weeknight when I want something new.
These delectable fried eggs with tomato sauce are ideal for any occasion.
This recipe is quick and easy to prepare in a few simple steps.

INGREDIENTS:

For four servings.
  • 1 tablespoon of extra virgin olive oil.
  • 1/2 medium onion, chopped 28oz (800g) Canned or fresh tomatoes
  • 1 cup finely chopped spinach.
  • 8 eggs
  • 115 gram ricotta cheese
  • Season with salt, pepper, dried oregano, and red pepper flakes to taste.
  • A thick slice of crusty grilled bread, to serve

INSTRUCTIONS:

  1. Preheat the oven to 400° F.
  2. In an oven-proof big pan (oven or equivalent), heat the olive oil before adding the chopped onion.
  3.  Season with salt and oregano, then sauté for 5 minutes over medium-high heat, until the onion is tender and transparent.
  4. Add the smashed tomatoes, season with salt, pepper, and red pepper flakes, and cook for about 10 minutes.
  5. Stir in the spinach and simmer for an additional 3 minutes, or until wilted.
  6. Remove the pan from heat, poke eight holes in the sauce with the back of a spoon, and add the eggs. 
  7. Lightly season the eggs with salt and pepper. Sprinkle the ricotta over the eggs. 
  8. Bake on the top shelf of the oven for 10 to 15 minutes, or until the egg whites are stiff and the yolks runny.
  9. Serve with grilled, crusty bread.
